The Christmas season - a festival for all your senses and the whole family. Christmas is a time for enjoyment, which is why there are special delicacies with which we have always associated this festive occasion. Just the smell of cookies, cinnamon stars and spicy gingerbread bring back the wonderful moments of our childhood. Wicklein's master bakers and gingerbread makers use traditional recipes and select ingredients to create Christmas pastries of the highest quality. The enjoyment of our Original Nuremberg Gingerbread is the real beginning of the Christmas season.
Elisen-Lebkuchen are the royals among the gingerbreads. The dough is called 'mass' and must contain at least 25% almonds and/or hazelnuts and/or walnuts and a maximum of 10% grain flour. According to the guidelines for pastries, these masses are spread on wafers and gently baked. We then coat our finest Elisen gingerbread with high-quality chocolate or tasty sugar glaze.
TRADITIONAL ART OF BAKING
Our fine gingerbread on wafers contains at least 14% nuts and/or seeds in the mass. Our Meistersinger Oblaten Lebkuchen contains as much as 20 % nuts and seeds. Of these, 50% are almonds and/or hazelnuts and/or walnuts. After baking, they are coated with a sugar glaze or chocolate. Even without glaze, this tasty gingerbread on wafers from Nuremberg is a delicious pastry treat.
PURE ENJOYMENT WITHOUT GLAZE
Our white gingerbread contains at least 15% whole egg and/or an equivalent amount of egg products or milk protein products in the mass and no more than 40% flour and/or starch. They are known for their slight aniseed note and their sponge cake-like consistency. Our gingerbread makers prepare them in a rustic rectangular shape. After baking, they are neither glazed nor coated nor filled. Our plain gingerbread does not require the addition of oilseed.
FINE BAKED GOODS WITHOUT WAFERS
We call those types of gingerbread not baked on wafer bases brown gingerbread. They are formed from dough in our gingerbread factory, spread or cut and baked directly on the tray. There are recipes both with and without oil seeds. Our brown gingerbreads contain no more than 3% added fat, based on the proportion of flour.
